Every bowl of oats that I make is slightly different, but they never fail to satisfy my mood. I am constantly thinking, “This is the best bowl I have ever made”, and I truly feel like that at the time because each bowl has an impact on my day. Today I woke up to a cold and drizzly morning. I knew it was an oatmeal day, and slowly came to my topping decisions as I slowly got out of bed. It was one of those mornings where it took a little “self-talk” and thoughts of a lovely breakfast to leave the comfort of my cozy sheets.

Lately I haven’t been able to get enough blackberries. I love, love LOVE this berry. They are sweet, tangy and crunchy–the perfect combination to top oatmeal, or anything for that matter. I was craving some good old almond butter and raspberry jam melted on top of my warm oats, and so was the inspiration for this bowl.

In the mix:

Base: 1/4 cup oat bran, 2 TBS rolled oats, 1/3 cup vanilla soy milk, 1/2 cup water, 1/2 sliced banana, 1/2 TBS chia seeds, 1/2 TBS ground flax, cinnamon.

Toppings: Raspberry jam, blackberries, almond butter, coconut butter.

This bowl rocked my world this morning, and I love how the flakes of coconut butter melt when they hit the warm bowl. I think the coconut butter may have been the star companion to my blackberries and raspberry preserves. This breakfast was indeed, “The best bowl I’ve ever made”….well at least for today. I’m off to brave the cold, miserable weather with a smile in my heart and love in my belly! Happy Tuesday!

Before I get into my snack bar reviews, lets start with my favorite meal of the day:  breakfast. Unless I have something in mind (Let’s be honest, I usually think about what I am going to have for breakfast before I go to bed!), my breakfast cravings tend to be non-existent in the morning; I have to debate with myself as I am getting ready about what I am “in the mood” for. Today was an exception to this, and I woke up thinking, “WARM SPICED APPLE, WARM SPICED APPLE.” I quickly entered the kitchen and made stove top oats with natural chunky apple sauce. In my mix: 1/3 cup natural apple sauce, 1/3 cup unsweetened vanilla almond milk, 1/4 cup water, cinnamon, nutmeg, vanilla extract, 1/3 cup rolled oats, 1/2 TBS chia seeds, 1 TBS natural crunchy almond butter, Crofter’s North America Superfruit Spread, 1 TBS Bear Naked Fruit and Nut Granola. It was warm and delicious! I’ve never tried almond butter that is JUST ground almonds and was surprised by the runny consistency. I actually really liked it in my oats, but for spoonfuls of nut butter, I think I prefer the sweetness of MaraNatha Crunchy No-Stir.

I have a massive snack bar collection that I need to start cutting down on before graduation! I don’t even know how many Larabars, Kind Bars, Clif Bars, Luna Bars, Kashi Bars and other random bars I have in my apartment. WHOOPSIES, I’m a snack bar pack-rat. I was hungry slightly after breakfast this morning, and decided to try the Bumble Bar, that I purchased a few weeks ago.  It was somewhat bland but extremely hearty packed with sesame and flax seeds. I think I am more of a fruit/nut bar person, so this wasn’t my favorite but the toasted sesame flavor was on key.

Before heading back to school yesterday I had a photo-shoot with my princess-cat, Rose, and tried the Ginger Snap Larabar. This bar contains: Dates, Almonds, Pecans, Cinnamon, Ginger and Cloves. I am SO impressed with the flavor! It was spicy and warm; perfect with a cup of orange tea. I immediately ran to my mom’s spice cabinet to investigate the prominent flavor in this bar. The result: Ground Cloves. I love the cozy feeling of this spice, and think it might be making some appearances in my cooking soon!!

I’m having a bit of  cookers-block. I have been trying to think of new dishes I want to create but the more I search recipes etc for ideas the more confused I am about where my flavors are coming from, and the combination’s I want to try. This is semi-frustrating, but I know it will pass…well I hope it will pass because I plan to participate in this week’s Cook’s Mission!

I wish I could take after my Princess Rose and lay around all day. How nice it must be to live the life of a cat.

The Beginnings

Favorite Study Snack: Turkish Apricots Stuffed with Almonds

Happy Lick-Your-Almond-Butter-Jar-Clean Day Friday. Remember that almost empty jar I pictured yesterday? Well, I made sure to put it to good use today with Oats In a Jar! I have done this before with overnight oats, however; putting warm stove-top oats in a jar makes for an infinitely better melty-almond experience. I used my standard banana-oat mix ( 1/3 cup unsweetened vanilla almond milk, 1/3 cup water, cinnamon, nutmeg, vanilla extract, 1/2 banana, 1/3 cup steel-cut oats and 1/2 TBS chia seeds), mixed a handful of blueberries in at the very end, added the mixture to my almost empty Maranatha Almond Butter jar and topped with Chobani Plain Greek Yogurt, Crofter’s South America Superfruit Spread (Maqui berries and Passionfruit), chopped Turkish Apricots and Galaxy Vanilla Almond Granola. DELICIOUS! There were points were I literally was eating spoonfuls of ALMOND BUTTER! Whoever started this OIAJ trend needs an award. My favorite addition was the Turkish Apricots. I love dried apricots, and often snack on them with mixed nuts. (see picture above, my favorite way to eat them= stuffing with almonds!)  These are the most flavorful, and have the best texture. I find that bagged apricots are some times “gummy” and have a preservative taste. I only chopped 1 or 2 to put into my oats, and despite the other flavors, could taste them in every bite.

I’m headed home this afternoon for an eye doctors appointment. The pink eye I had about a month ago turned into an allergy and I have been wearing glasses ever since! I am glad to finally be glasses free, plus I get to go out for a fish dinner with my parents! (Fish because we don’t eat meat on Friday during lent/ I love fish! Can you believe Lent is almost over? I gave up caffeinated beverages, and only cheated a few times, plus get de-caf lattes and coffee so it’s not all bad! I have to say I have been feeling FANTASTIC being caffeine free.) With traveling comes ROAD SNACKS! It’s not a far drive so I packed some finger foods: 1 large carrot, 1 celery stalk, 1 Gala apple and left over mango sprinkled with cinnamon. I ended up eating another Gala apple while chopping all of this! They are so good! I made a spontaneous Lady Gaga CD purchase yesterday when I went to Target. I can’t remember the last time I actually bought a CD. This should be a fun one for the ride; there is something about her music that is….interesting to me.

In other news I am 99% sure that I am going to get a juicer this summer! I’m thinking about getting one from Breville. I found a few that were less expensive, but from past experience buying “cheaper” appliances, I know that they don’t always last and quality is extremely important. If anyone has suggestions let me know!
