I’m MELLLTTIINNGGGGG…. Just like the witch in The Wizard of Oz. My top floor apartment combined with 80 degree humid weather has generated sauna like living conditions. After dinner last night I sat on my futon praying for a cool breeze to pass through my window…..It didn’t happen.  I did what any profusely sweating individual would do and stuck my head in the freezer. While I was hanging out in my refrigerator, I desperately searched for some relief to beat the heat. I had about 15 cups of water, a glass of vanilla soy milk mixed with Hershey’s Unsweetened Cocoa Powder and Red Rhapsody Odwalla (how did I think of this? It was amazing!) and finally discovered the best creation ever: chocolate banana soft serve topped with strawberries.

I needed to iron my skirt for work and the thought of a hot iron made me cringe. I knew that I needed some reward to motivate me through it and all that I could think about was plain ice cream. The only ice cream in my freezer was a complicated peanut butter and chocolate ripple and I was not in the mood. My eye caught a frozen banana and I remembered seeing “banana soft serve” in blogs, so decided to give it a try. I combined 1 large frozen banana, 1 tsp cocoa powder and a few scoops of plain yogurt into my blender at the lowest setting. I placed the mixture in a bowl and allowed it to harden in the freezer as I braved the heat from my iron.  WHY HAVE I NEVER DONE THIS BEFORE?!?!? It was so delicious, I only wish I had time to let it freeze a bit more. This treat made me seriously consider buying bananas in bulk so that I can have an ample freezer supply this summer.

I knew that I couldn’t live in my refrigerator forever and finally ended up on the floor, snuggled next to my mini Honeywell fan from college and more water.

Breakfast today was also weather influenced. I made a smoothie with 1/2 of a Red Rhapsody Odwalla, 1 container of plain yogurt, 1/2 scoop vanilla whey protein powder and lots of ice. I topped my smoothie with ~1/2-3/4 cup of  Heart to Heart and Go Lean Crunch. It was a good way to beat the heat before a long day. I’m off to a morning filled with meetings and a field trip!

WHOA, busy day. It is 6pm, and this is the first time today that I have been able to sit and relax! I had a day full of appointments, errands and, the most significant happening, MY LAST COLLEGE CLASS EVER!!!!!!! WOOOOOOHH! Now all I have to do is pass 2 finals, finish 1 paper and get through Senior Week.

Today started at 7:45 am when I woke up to head to the gym. I typically don’t go to the gym in the morning, but since today was rather busy I wanted to wake up early to energize myself. Before going to the gym I tried the Chocolate Peanut Butter Luna Protein Bar. Hello lover 🙂 (okay…I’m obsessed with Sex in the City, and my “hello lover” phrase is stolen from the one and only Carrie Bradshaw.). This was my favorite of the three flavors by far! It isn’t overly sweet and has an awesome peanut butter and chocolate flavor. It has 12g of protein and 190 calories, which was perfect pre-gym fuel.

On Wednesdays I have been trying to incorporate some upper body weight training, so I usually start with a light cardio and then lift moderate weights. Since I was crunching time I cut my work out a bit short, but here it is:

20 minute run–2.2 miles

4 minute walk @ 4.0

3 x 10 bicep curls with a bar @ 40 lbs

3x 10 lateral raises @ 7.5 lbs

3×10 hammer curls @  20 lbs

3 x 10 side crunches @ 22.5 lbs
Consuming whey protein within an hour post work out is supposed to be great for rebuilding muscle so I decided to have breakfast number two: Green Monster, Granola and Raw Almonds. This contained: 1 scoop chocolate whey protein, 1 scoop Green Amazing Grass Superfood, a generous amount of cinnamon, 1 large frozen banana, 2/3 cup vanilla soy milk, 1/3 cup water, 2 handfuls of spinach and 2 ice cubes. I topped it off with 1/4 cup Nature’s Path Vanilla Almond Flax Granola and raw blanched almonds. When I was consuming this lovely bowl I had two revelations:

1) CINNAMON IS THE BEST SPICE EVER! I would and do put it on everything. It is so key for flavor the warm flavor of this bowl, I love it!

2) Raw blanched almonds really add a lot flavor/texture wise. They are buttery, smooth, and full of flavor. Roasted almonds have a bit more crunch but these little gems are phenomenal!

AH! I feel like I have been away for ages! This weekend was a little NUTS and filled with a few too many NUTS.

I began my Saturday with a lovely breakfast with my roommate of Cinnamon Peaches and Cream Kodiak Cakes with sliced pineapple, watermelon, orange juice and coffee on the side. I love Kodiak Cakes. Unlike many whole wheat mixes I have tried, Kodiak cakes are fluffy, doughy and extremely easy to make. For a single serving all you have to do is add 1/3 cup mix with 1/3 cup water! I added cinnamon to the batter and topped it with sliced peaches, Chobani Plain Greek Yogurt and more cinnamon. My roommate always thinks it’s a bit odd when I take pictures of food (she doesn’t know about my blog) so I decided to forgo a picture and enjoy our breakfast together. There was a big event on campus so we headed over for a while to enjoy the nice weather, music and good company. Before I knew it, it was 4pm and I was so busy having fun that I had forgotten lunch! I’m a little embarrassed to post this (and almost didn’t), because the premise of my blog is “healthy living” and this definitely wasn’t the healthiest of days for me, skipping lunch and then going a bit overboard with my evening eats. But blunders are a part of life–living and learning

I was starving and slightly thirsty when I got back so  I decided to make myself a SUPER Green Monster topped with Granola and Raw Almonds. This monster was so big that I barely fit it into the bowl! It contained: 1 large frozen banana, 1 carrot, 1 scoop chocolate whey protein powder, 1 scoop GREEN Amazing Grass Superfood, ~1 TBS peanut butter, 2/3 cup almond milk, 1/3 cup pumpkin, 1/3 cup water, 2 large handfuls of spinach and 3 ice cubes. I topped it off with 1/4 cup Nature’s Path Vanilla Almond Granola with Flax and raw almonds.

After a few bites, I thought I needed more substance so I added melted Dark Chocolate Almond Spread and Coconut Butter to my bowl. This was very tasty but I think I went a little over board with my nut butters! It was really filling, but I couldn’t consider it a full meal especially since I missed lunch. A little while later I had an apple, a large carrot and made  a plate with a serving  Dr. Crackers and Broccoli and topped it off with a copious amount melted Extra Sharp Cheddar Cheese. I was beyond full and decided a nap was in order after such a long day. When I woke up, I wasn’t hungry but made a snack with the rest of my Chobani, Almond Butter ~2 TBS and cinnamon . I also made toast topped with almond butter, raspberry jam, chopped date and apple sauce (random but delicious!). I nearly emptied my almond butter jar so I think it’s safe to say that oats in a jar will be making an appearance this week. Everything I consumed was “healthy food” but the quantity was a bit much; my eyes were much bigger than my stomach! I love nut butters but they tend to be the type of food that I can get a bit carried away with. Between the peanut butter, almond butters and coconut butter I think I had something around 5-6 TBS in a very short period of time.

Needless to say my stomach was NOT feeling so hot after all of these random-mish-mashed foods. I was just looking for a quick fix and went a little overboard. Happens to the best of us.

I wasn’t hungry when I woke up this morning, and my stomach was still feeling uneasy from my food selections but each day is a new day for health. I decided to start today on a fresh foot with a bowl of sliced strawberries, blackberries, Nature’s Path Vanilla-Almond Flax Granola, and vanilla soy milk. I had an apple and cappuccino for a mid-afternoon snack and started to feel a bit more on track. I settled for an early dinner which was fresh and clean. A big spinach salad with 1/3 block tempeh, 1/2 of a roasted beet, 1 golden beet, cucumber, red pepper, tomato, mushrooms, 1 large carrot, clover sprouts in a red wine vinaigrette. I had a few Dr. Krackers on the side  and for dessert I had an ice cream sandwich.

I usually carry around granola bars and pack small snacks “in case of emergency”. I hate when I miss a meal or a snack and then try to compensate for it later in the day; it just leaves me feeling uncomfortably full and lethargic. Like I said before, each day is a new day for health so I just left my Saturday behind and started Sunday off with a fresh outlook. My mom always says, it’s better to be proactive then to dwell on things.

It’s official. I am in a breakfast rut. My oat comeback yesterday must have been a fake out because this morning I was craving a green monster and granola. I wasn’t planning on having ANOTHER smoothie this morning, but when cravings call I answer. This is possibly the most uninteresting breakfast to photograph, and I realize how repulsive the green looks but I promise you it really hits the spot. I find that my breakfast cravings tend to reflect the way I am feeling. I had a late night with friends yesterday, which left me dragging when I woke up this morning. Green smoothies are the perfect remedy when I am feeling lethargic upon waking. They are light, yet pack tons of essential nutrition and have an “energizing” effect. In to my blender: 1 large frozen banana, 1/4 cup frozen raspberries, 3 ice cubes, 1 scoop Chocolate Whey Protein, 1 scoop Amazing Grass Green Superfood, 1 cup vanilla soy milk, ~2-3 cups of spinach. I topped my bowl with some Galaxy Granola and raw almonds. I’m glad I have a few deep soup bowls because this smoothie yields over 3 cups!

To add to my lameness, I had another Jonagold and coffee before heading to class. I’m starting to feel like a lame food blogger. I’m in need of some creativity!

Dinner last night was a quick throw together with my roommate. I love cooking, but sometimes it is nice to dig into the depths of your fridge and make a 3 minute plate of food. I ended up having a “Semi-Greek Salad” which consisted of HUGE plate of spinach (I was having a major spinach craving after a green free day haha!) topped with a toasted Boca burger, lots of Cedar’s Garlic Lovers Hummus, pita chips, cucumber, red bell pepper, feta cheese, kalamata olives, and sprouts. After dinner I broke into….EASTER CANDY!! Remember my second bunny?

Last seen.

Well, it no longer has a back pack to carry all of its yummy carrots in. I also made a dent in my peanut M&Ms. What remains:

Hopefully my eats will progressively become more interesting through out the day! Tonight I am going to an “etiquette” dinner with my roommate. Our friends who cooked us dinner a few days ago are in a fraternity, and one of their projects is to host a nice dinner and learn table manners! Somewhat random but naturally, I love this concept. I’m not positive who my “date” will be, but it will be interesting to be educated the traditional ways of fine dining. When it comes to etiquette, I think that stopping to take photos is probably a no-no (whoops!) but I’ll see what I can do with my sneaky iphone photo taking skills!

I had every intention on making a big beautiful bowl of oatmeal this morning but I was craving a green monster. When I woke up I felt extremely tired and my head was slightly pounding. I needed something that required minimal effort and that was cool and energizing to get me going. I decided to mix up my ingredients a bit and I’m so glad I did. This bowl was thicker and more flavorful! I loved it.

Into the blender:

1 large frozen banana

3 frozen strawberries

3 ice cubes

1/3 can pumpkin

1 scoop GREEN Amazing Grass Superfood

1/2 scoop Chocolate Whey Protein

~3/4 TBS Peanut Butter

Cinnamon (SO KEY!)

1/2 cup Almond Milk

1/2 Cup Water

2 handfuls of spinach

I really need a better blender. I find myself constantly shaking the blender and pushing everything down through the process. It takes me way longer to blend the ingredients than it should. I topped it with some Galaxy Vanilla Almond and had a big Jonagold on the side. I’m not sure if I actually wanted that apple but I wanted more crunch after I finished the bowl! The one downside about making smoothies for breakfast is that I always want something solid to go along with it, where as oatmeal fulfills  all of my meal texture/flavor requirements. Hopefully I’ll get back to the world’s greatest breakfast tomorrow!

My roommate and I are having a special dinner tonight and I can not wait. Hopefully I’ll be able to sneak a few photos!!

I woke up this morning with absolutely NO appetite; very strange for me. I’m never starving when I wake up but almost always want a big bowl of oatmeal or granola to start my day. Today, the very thought of oatmeal, or anything sweet for that matter made me cringe. I had a slight headache and stomach ache, and could only imagine that something sweet would add to my yucky feeling.

Why was I feeling like this? Well, last night after dinner I was full and content but the sweet-tooth fairy told me that it was time for dessert. I wasn’t craving anything but went for an old stand by: Vanilla Ice Cream topped with Chunky Apple Sauce, Peanut Butter and Kopali Dark Chocolate Covered Cacao Nibs. I was watching TV as I ate this and before I knew it, it was gone. I decided I wanted a bit more and fixed myself a second bowl, this time using Dark Chocolate Almond Spread and Galaxy Vanilla Almond instead of Peanut Butter and Cacao Nibs. About half way through the second bowl I was feeling uncomfortably full but refuse to waste, so finished it. I did not leave myself enough time between eating and bed to digest and it resulted in a “yucky” feeling morning.

I had to get to class, and never go breakfast-free, so I made myself a bit of a light and savory breakfast, aka a Green Monster. Into my blender went 1 cup vanilla soy milk (I like using almond milk better, but had to finish this carton off), 1 frozen banana, 1 scoop Chocolate Amazing Meal, 2 huge handfuls of baby spinach. I used the apple sauce jar (ELR style) that I conveniently polished off last night as my “to-go” cup and headed out. I think I was a bit dehydrated (maybe last night too…should have had WATER instead of extra dessert, oy!) and I drank a few glasses when I woke up. Thankfully my headache and stomach ache were gone a few hours later, and my appetite returned.

For lunch I had a normal campus-dining hall large tuna salad complete with artichokes, cauliflower, cucumbers, mushrooms, snap peas, carrots, spinach, balsamic vinaigrette and a few dashes of hot sauce. I love the combination of artichokes, cauliflower and tuna, it has such an Italian feel. If I was able to get a few olives and peppers in there it would have sealed the deal.  I also had a big and crisp Empire Apple on the side. I can’t wait for apple picking season, I have to say I am pretty obsessed with all varieties of this fruit.

Later in the afternoon I reclaimed my sweet tooth with a new favorite combination at Starbucks: Grande Decaf Cappuccino with Sugar Free Hazelnut. Yes, I know the sugar-free flavors aren’t particularly good for you, but they just so delicious every once and a while :). I was actually craving an Awake Tea Soy Latte, but I have kept up during Lent with the “no caffeinated beverages” ordeal. I had a few slip-ups here and there, but I feel AMAZING being caffeine free. I swear I am a whole new person. I love coffee so I still drink decaf but I feel more refreshed and energetic all the time!

Speaking of Lent, IT’S ALMOST OVER, which means Easter is coming up! I’m heading home for a big family get together on Sunday, and hopefully will be cooking up something fantastic to share with my family! I have been thinking of some type of sweet bread, rosemary bread, an asparagus dish, a root vegetable dish, and something lemon/blueberry for dessert. Decisions, decisions.

For dinner I was supposed to go to Sedar with my friend but she wasn’t feeling well, so AGAIN I did not go. She has promised to cook a traditional Kosher meal with me later in the week, so at least I can look forward to that (hopefully!). I wanted to keep dinner light and simple tonight, and decided to make use of the second half of my celeriac and leek. It is still a bit cold out (but won’t be for long!!!) so I decided to make a Leek and Celery Soup topped with Balsamic Roasted Mushrooms and Lemon-Thyme Cream. Well…this was a bit more of an “experience” than I had hoped for. When I went to remove the blender from it’s base, my soup came out of the bottom! All of my pretty visions  died. All I wanted for dinner was a nice soup and here it was all over my counter, and BURNING my hand. I managed to save 3/4 of it, garnish it how I wanted and try it’s deliciousness, but it was a sad, sad cooking experience. Maybe my blender just wasn’t meant to be used twice in one day? No more green monsters for a while :(. On the side I had some a simple salad with spinach, red peppers, olive oil-herb roasted carrots, cucumber, sprouts, goat cheese and apple-cranberry chutney.

I can’t decided if dessert is in my future this evening but I have learned a very important lesson: listen to your body not your habits. I get so in the habit of having dessert every night that I often don’t realize if I’m actually in the mood for it. Usually if I am full, I can have a piece of chocolate and be done. Last night was a combination of wrong choices:  not hydrating properly and the decision to mindlessly eat dessert even though I was not craving it. I felt so off today, and it goes to show that the foods you eat really do influence the way you feel. Oh well, live and learn. Hopefully tomorrow my breakfast concoctions will be back on track :).

Happy St. Patrick’s Day!! I felt that it was necessary to start my day off with something green in honor of today. A Green Monster in a Green Bowl and topped with Galaxy Vanilla Almond Granola (aka my new love…but I’ll get to that in a moment.). In to the blender went: 3 ice cubes, 1 frozen banana, 4 frozen strawberries, 1 handful of spinach, 1/2 cup Chobani Plain Greek Yogurt, 1/2 cup vanilla soy milk, 1 TBS chia seeds and 1 Scoop Amazing Grass Green Superfood.

Okay now… HOW HAVE I NEVER TRIED GALAXY GRANOLA?!?!?!?!?! I have seen it in a few blogs, and had to pick it up when I saw it at the natural food store. I am a granola girl through and through. I top everything with it, eat it straight and it is my staple for breakfast all summer long. My favorite in the summer is another variety of vanilla almond that I use to top yogurt and sweet summer berries, and I have to say the Galaxy version absolutely amazed me. It is made with applesauce instead of oil, and I only think that it inhances its flavor! I had to have a handful out of the bag after eating this, just for good measure! It is crunchy, naturally sweet and has hearty pieces of almonds in it. I love when granola holds it’s structure and the flakes/clusters are solid. Galaxy Granola is out of this world…pun intended. I might have to become a Fruit Not Fat (company name) granola convert.
