I woke up this morning with absolutely NO appetite; very strange for me. I’m never starving when I wake up but almost always want a big bowl of oatmeal or granola to start my day. Today, the very thought of oatmeal, or anything sweet for that matter made me cringe. I had a slight headache and stomach ache, and could only imagine that something sweet would add to my yucky feeling.

Why was I feeling like this? Well, last night after dinner I was full and content but the sweet-tooth fairy told me that it was time for dessert. I wasn’t craving anything but went for an old stand by: Vanilla Ice Cream topped with Chunky Apple Sauce, Peanut Butter and Kopali Dark Chocolate Covered Cacao Nibs. I was watching TV as I ate this and before I knew it, it was gone. I decided I wanted a bit more and fixed myself a second bowl, this time using Dark Chocolate Almond Spread and Galaxy Vanilla Almond instead of Peanut Butter and Cacao Nibs. About half way through the second bowl I was feeling uncomfortably full but refuse to waste, so finished it. I did not leave myself enough time between eating and bed to digest and it resulted in a “yucky” feeling morning.

I had to get to class, and never go breakfast-free, so I made myself a bit of a light and savory breakfast, aka a Green Monster. Into my blender went 1 cup vanilla soy milk (I like using almond milk better, but had to finish this carton off), 1 frozen banana, 1 scoop Chocolate Amazing Meal, 2 huge handfuls of baby spinach. I used the apple sauce jar (ELR style) that I conveniently polished off last night as my “to-go” cup and headed out. I think I was a bit dehydrated (maybe last night too…should have had WATER instead of extra dessert, oy!) and I drank a few glasses when I woke up. Thankfully my headache and stomach ache were gone a few hours later, and my appetite returned.

For lunch I had a normal campus-dining hall large tuna salad complete with artichokes, cauliflower, cucumbers, mushrooms, snap peas, carrots, spinach, balsamic vinaigrette and a few dashes of hot sauce. I love the combination of artichokes, cauliflower and tuna, it has such an Italian feel. If I was able to get a few olives and peppers in there it would have sealed the deal.  I also had a big and crisp Empire Apple on the side. I can’t wait for apple picking season, I have to say I am pretty obsessed with all varieties of this fruit.

Later in the afternoon I reclaimed my sweet tooth with a new favorite combination at Starbucks: Grande Decaf Cappuccino with Sugar Free Hazelnut. Yes, I know the sugar-free flavors aren’t particularly good for you, but they just so delicious every once and a while :). I was actually craving an Awake Tea Soy Latte, but I have kept up during Lent with the “no caffeinated beverages” ordeal. I had a few slip-ups here and there, but I feel AMAZING being caffeine free. I swear I am a whole new person. I love coffee so I still drink decaf but I feel more refreshed and energetic all the time!

Speaking of Lent, IT’S ALMOST OVER, which means Easter is coming up! I’m heading home for a big family get together on Sunday, and hopefully will be cooking up something fantastic to share with my family! I have been thinking of some type of sweet bread, rosemary bread, an asparagus dish, a root vegetable dish, and something lemon/blueberry for dessert. Decisions, decisions.

For dinner I was supposed to go to Sedar with my friend but she wasn’t feeling well, so AGAIN I did not go. She has promised to cook a traditional Kosher meal with me later in the week, so at least I can look forward to that (hopefully!). I wanted to keep dinner light and simple tonight, and decided to make use of the second half of my celeriac and leek. It is still a bit cold out (but won’t be for long!!!) so I decided to make a Leek and Celery Soup topped with Balsamic Roasted Mushrooms and Lemon-Thyme Cream. Well…this was a bit more of an “experience” than I had hoped for. When I went to remove the blender from it’s base, my soup came out of the bottom! All of my pretty visions  died. All I wanted for dinner was a nice soup and here it was all over my counter, and BURNING my hand. I managed to save 3/4 of it, garnish it how I wanted and try it’s deliciousness, but it was a sad, sad cooking experience. Maybe my blender just wasn’t meant to be used twice in one day? No more green monsters for a while :(. On the side I had some a simple salad with spinach, red peppers, olive oil-herb roasted carrots, cucumber, sprouts, goat cheese and apple-cranberry chutney.

I can’t decided if dessert is in my future this evening but I have learned a very important lesson: listen to your body not your habits. I get so in the habit of having dessert every night that I often don’t realize if I’m actually in the mood for it. Usually if I am full, I can have a piece of chocolate and be done. Last night was a combination of wrong choices:  not hydrating properly and the decision to mindlessly eat dessert even though I was not craving it. I felt so off today, and it goes to show that the foods you eat really do influence the way you feel. Oh well, live and learn. Hopefully tomorrow my breakfast concoctions will be back on track :).

Are you shocked by the color of this drink? Don’t let the color intimidate you, the taste more than makes up for it. I have been wanting to try a fresh vegetable/fruit juice for a while now, but always end up with a fruit smoothie instead. After a long day of studying, I decided to go to my yoga studio for a much needed Vinyasa class. My body was craving some stretching after sitting in a chair for the entire day, and beginning to feel a bit stiff after taking a few weeks off. The studio has a juice bar and organic kitchen (I seriously want to own one some day.) attached to it so I decided to get a refreshing pick-me-up after class. I wasn’t in the mood for anything too heavy since I had a late lunch and it was almost dinner time. I decided that today would be the perfect day to try the “Green ‘n Lean“: Apple, Kale, Parsley, Celery, Lemon. It was SO refreshing! I could really taste the parsley, celery and lemon which are very ‘clean’ flavors. This drink reminded me of an upscale lemonade, and it may have inspired me to buy a juicer this summer. I always find that fruit juice tastes the best when it is straight from the source, but would never thought to incorporate vegetables. It put me in such good spirits that I decided to make something equally refreshing for dinner: Pan-seared Mahi-Mahi with Mango-Passionfruit Compote on a bed of Spinach.This is the same compote that I made for my oats on Saturday, and I thought it would go wonderfully with the meaty Mahi-Mahi. Again, I diced 1/4 of a mango, sautéed it with cinnamon, added orange juice to coat, added ~2TBS Crofters Asia Superfruit Spread, brought it all to a simmer and let it reduce until it became a thick consistency. It was sweet and tart; a nice addition to the lightly peppered fish and spinach.

It has been quite the adventurous day. It all started with a lack of internet (thus the late post) and ended in a long search to get my phone fixed.  Before I start rambling on the happenings of today I’ll give you some food bites.

I started the day off with a variation of yesterdays breakfast: 1/2 cup Plain Chobani Greek Yogurt, 1/2 cup vanilla soy milk, 1/2 TBS Chia, 1/2 frozen mashed banana combined and let to sit for ~10 minutes and topped with handful of blueberries, 1/2 ripe banana, cinnamon and 1/4 cup Emmy’s Organics Raw Granola.This granola is made of buckwheat, dates, almonds, agave, flax, cinnamon, vanilla bean and Himalayan crystal salt, all organic and raw. I liked the crunch and earthy flavor, it definitely had a “raw” taste to it. Not bad, but when I think of granola I need the real deal. After this I snacked on a handful of  Galaxy Vanilla Almond and a big Jonagold. On my way out the door I noticed my phone had a blank screen. Great, this meant that I had to reorganize my plans and make a trip to get it fixed.

My raw breakfast inspired me to “be one with nature”, and I decided that it was the perfect day for a run. Prepare to get sentimental with me for a moment. There is something so freeing about running outside when it is just you, nature and some good music. There are no expectations, or distance/speed requirements, just instincts and scenery. The path I run on is along side of a river. The trees are still bear, but hold the prospect of sprouting leaves soon. I heard the songs of the seagulls, and saw a few tulips beginning to poke there way through the ground; true signs of Spring! I paused for a moment at the midway point to absorb the rushing waterfall glistening in the sun. It was beautiful and made me feel ALIVE! Okay, enough of that, I just think it is so serene and it is hard to describe the beauty that was around me and how refreshing it make me feel.

I ended up running for a leisurely 40 minutes and came home to prepare some lunch. I was really thirsty and craving some fresh vegetables. I decided on a Big Salad topped with a Boca Burger and Hummus, and a side of Green Grapes and Kabocha.I’m not sure what makes these burgers so appealing to me but mashed with hummus and spinach, they are divine! I was going to make a boca+hummus+veggie sandwich, but when I opened my fridge, I knew that all of the things I wanted could not fit between two pieces of bread. Shortly after I wanted something chocolate and carby. I found the perfect little bite when I opened my pantry:A Quaker’s True Delight Raspberry Mocha Cafe Square. I love these things! They are delightful. The mocha/raspberry flavors are bold, and the oats are dense.

After lunch I headed out on a three hour expedition to get my phone fixed. I felt so lost without the use of my phone for nearly an entire day. (What can I say, we are a technology dependent society) The phone store I go to had moved and I spent about 30 minutes searching for their new location, which was BEHIND another building with no sign. This was a little frustrating but at least the weather was nice, and I wasn’t in a rush to get anywhere. When I explained my problem,  I was referred to the Apple Store a half hour away. I came at the worst possible time, and the store was packed! I had to wait a while but was thankful to have someone look at my lifeline phone. The “geniuses” at the Apple store are always so friendly and helpful, I really appreciate their work (I would be so frustrated). My phone was finally fixed, but all of the contacts had to be deleted…I still feel a bit lost.

Dinner was a winner: Lemon-Ginger and Spinach Couscous with Mango Curry Tempeh

The couscous: ginger, lemon, 1/4 cup whole wheat couscous, handful of torn spinach, ~1 TBS raisins.

The Tempeh: Spanish onion, garlic, curry powder, cumin, cinnamon, cayenne, mango, red bell pepper and tempeh.

Since cooking with tempeh is my “new food venture” this week, I will divulge the details in my Sunday “new venture” post, but I’ll just let you know that it was GOOD!

Dessert is another raspberry+chocolate fix: frozen raspberries, Chobani and Maranatha Dark Chocolate Almond (melted with vanilla soy milk). The Dark Chocolate Almond Spread essentially became fudge, it was delicious! A perfect way to cozy up with the THE SYRACUSE ORANGE BASKETBALL GAME!!!!! GO CUSE!
