Today is going to be the LONGEST day of my life. I have been up since 6:45am and have my hardest final at 4pm. I have been studying for the past few hours, so thought a quick post was in order before making my way to the library. Yes, that’s right, no coffee shop for me today! I want to stay on campus studying until 3:50pm then casually make my way over to the exam room.

Today I woke up and needed an energy boost. I decided on a Loaded Green Monster for breakfast.I almost couldn’t fit the whole thing in my big wine glass! It was so refreshing and thick because I added some extra ice and frozen blueberries to the mix today. I’m doing extremely well with the whole “clean out my refrigerator/freezer” initiative. I just keep throwing random bits and pieces here and there, so I think I should be successful by the end of next week when I officially move out. Scary to think that one week from Sunday I will be out of here!

In my monster: 5 ice cubes, 1 large frozen banana, 1/4 cup frozen blueberries, 1 scoop chocolate whey protein powder, 1 scoop Green Amazing Grass Superfood, cinnamon, 1 TBS crunchy natural peanut butter, 2/3 cup vanilla almond milk, 1/3 cup water and 2 big handfuls of spinach.

It was so thick that I ended up eating it with a spoon. I should have added granola to it because shortly after I wanted something crunchy and had a Kashi Pumpkin Pie Bar with a cup of coffee.  I love pumpkin, and went through a serious pumpkin phase this fall where everything I ate had this flavor. I had pumpkin coffee, muffins, bread, yogurt, pie, ice cream, granola bars, custard…the list goes on, it was intense. I had two of these just sitting in my overflowing pantry and thought it would be a nice treat before starting some major studying.Lunch today will be out of my lunch box. First up, Ezekiel Cinnamon Raisin Sandwich with goat cheese, cinnamon (seriously, I put cinnamon on EVERYTHING!), Crofter’s North America Superfruit Spread, spinach, cucumber and turkey. As I said before, I’m doing extremely well with the whole fridge cleaning thing!Next up a variety of sides: Apple, Chobani with cinnamon and blackberries, almonds, 1 large carrot and 2 stalks of celery.I can already tell you that my apple will be devoured before lunch time. I get nervous when I am “crunch time” studying and apples are the perfect way to keep me focused. I ate a few extra almonds out of my jar while packing…what can I say, I need brain food :)!

I already have a little something-something planned for dinner after my exam. I planned it knowing that it would be a long and tedious day and wanted to come back to something exciting before I start studying for my second exam, which is tomorrow at 12:30pm. Looks like it’s going to be a long day and night :/ . Such is the life of a college student. 3. More. Days.

If I have learned one thing in college it is that Two Finals + One Paper + Sore Throat = miserable finals week.

I really wanted to make something fun for breakfast this morning like pancakes or a big omelet but my body felt like it was in the early stages of a cold.  I’m rarely sick but when I am, I am unproductive….NOT a good state to be in during finals week. I knew that I needed something cool, substantial, refreshing and healthy for breakfast to counteract my pre-cold symptoms. My solution: loaded green monster in a wine glass (to keep it classy 🙂 )

Into my blender: 4 ice cubes, 1 frozen banana, 1 scoop GREEN Amazing Grass Superfood, 1 scoop Chocolate Whey Protein, 2 tsp Hershey’s Unsweetened Natural Cocoa, cinnamon, 1 TBS natural crunchy peanut butter, 1/2 cup unsweetened vanilla almond milk, 1/2 cup water, 1/2 bag of spinach.

It was extremely soothing and filling. I am never completely satisfied when I “drink” my breakfast so I usually top it with granola and eat it cereal-style, but this mix did the trick this morning. I had an apple shortly after, but I think adding the peanut butter made my smoothie more substantial and satisfying. I’m feeling energized and ready to tackle some major studying and this cold!

During finals week our school library is constantly packed with students. (Although, I’m pretty sure that this week is the first time that many of them have actually seen the library.) I won’t be able to find a space/computer outlet if I try to go, and I know that I can’t be as productive as I would like to be in the small confinement of my apartment so I’m off to a local book store. I have found the book store to be a great environment for me to do work with little distractions.

I’m being slightly frugal and packed a lunch to bring with me. I know that they don’t typically like you to bring food but hey, I’m a poor college kid and if I buy an over priced latte while I’m there that counts right? I call my lunch “cleaning out my fridge”. I packed a whole wheat and flax wrap (my last one!) with Cedar’s Original Hummus, turkey, Swiss cheese, spinach, sprouts, Roma tomato and cucumber with a side of watermelon and pineapple. I almost got the wrap closed this time! MY SKILLS ARE IMPROVING!

AH! I feel like I have been away for ages! This weekend was a little NUTS and filled with a few too many NUTS.

I began my Saturday with a lovely breakfast with my roommate of Cinnamon Peaches and Cream Kodiak Cakes with sliced pineapple, watermelon, orange juice and coffee on the side. I love Kodiak Cakes. Unlike many whole wheat mixes I have tried, Kodiak cakes are fluffy, doughy and extremely easy to make. For a single serving all you have to do is add 1/3 cup mix with 1/3 cup water! I added cinnamon to the batter and topped it with sliced peaches, Chobani Plain Greek Yogurt and more cinnamon. My roommate always thinks it’s a bit odd when I take pictures of food (she doesn’t know about my blog) so I decided to forgo a picture and enjoy our breakfast together. There was a big event on campus so we headed over for a while to enjoy the nice weather, music and good company. Before I knew it, it was 4pm and I was so busy having fun that I had forgotten lunch! I’m a little embarrassed to post this (and almost didn’t), because the premise of my blog is “healthy living” and this definitely wasn’t the healthiest of days for me, skipping lunch and then going a bit overboard with my evening eats. But blunders are a part of life–living and learning

I was starving and slightly thirsty when I got back so  I decided to make myself a SUPER Green Monster topped with Granola and Raw Almonds. This monster was so big that I barely fit it into the bowl! It contained: 1 large frozen banana, 1 carrot, 1 scoop chocolate whey protein powder, 1 scoop GREEN Amazing Grass Superfood, ~1 TBS peanut butter, 2/3 cup almond milk, 1/3 cup pumpkin, 1/3 cup water, 2 large handfuls of spinach and 3 ice cubes. I topped it off with 1/4 cup Nature’s Path Vanilla Almond Granola with Flax and raw almonds.

After a few bites, I thought I needed more substance so I added melted Dark Chocolate Almond Spread and Coconut Butter to my bowl. This was very tasty but I think I went a little over board with my nut butters! It was really filling, but I couldn’t consider it a full meal especially since I missed lunch. A little while later I had an apple, a large carrot and made  a plate with a serving  Dr. Crackers and Broccoli and topped it off with a copious amount melted Extra Sharp Cheddar Cheese. I was beyond full and decided a nap was in order after such a long day. When I woke up, I wasn’t hungry but made a snack with the rest of my Chobani, Almond Butter ~2 TBS and cinnamon . I also made toast topped with almond butter, raspberry jam, chopped date and apple sauce (random but delicious!). I nearly emptied my almond butter jar so I think it’s safe to say that oats in a jar will be making an appearance this week. Everything I consumed was “healthy food” but the quantity was a bit much; my eyes were much bigger than my stomach! I love nut butters but they tend to be the type of food that I can get a bit carried away with. Between the peanut butter, almond butters and coconut butter I think I had something around 5-6 TBS in a very short period of time.

Needless to say my stomach was NOT feeling so hot after all of these random-mish-mashed foods. I was just looking for a quick fix and went a little overboard. Happens to the best of us.

I wasn’t hungry when I woke up this morning, and my stomach was still feeling uneasy from my food selections but each day is a new day for health. I decided to start today on a fresh foot with a bowl of sliced strawberries, blackberries, Nature’s Path Vanilla-Almond Flax Granola, and vanilla soy milk. I had an apple and cappuccino for a mid-afternoon snack and started to feel a bit more on track. I settled for an early dinner which was fresh and clean. A big spinach salad with 1/3 block tempeh, 1/2 of a roasted beet, 1 golden beet, cucumber, red pepper, tomato, mushrooms, 1 large carrot, clover sprouts in a red wine vinaigrette. I had a few Dr. Krackers on the side  and for dessert I had an ice cream sandwich.

I usually carry around granola bars and pack small snacks “in case of emergency”. I hate when I miss a meal or a snack and then try to compensate for it later in the day; it just leaves me feeling uncomfortably full and lethargic. Like I said before, each day is a new day for health so I just left my Saturday behind and started Sunday off with a fresh outlook. My mom always says, it’s better to be proactive then to dwell on things.

I had every intention on making a big beautiful bowl of oatmeal this morning but I was craving a green monster. When I woke up I felt extremely tired and my head was slightly pounding. I needed something that required minimal effort and that was cool and energizing to get me going. I decided to mix up my ingredients a bit and I’m so glad I did. This bowl was thicker and more flavorful! I loved it.

Into the blender:

1 large frozen banana

3 frozen strawberries

3 ice cubes

1/3 can pumpkin

1 scoop GREEN Amazing Grass Superfood

1/2 scoop Chocolate Whey Protein

~3/4 TBS Peanut Butter

Cinnamon (SO KEY!)

1/2 cup Almond Milk

1/2 Cup Water

2 handfuls of spinach

I really need a better blender. I find myself constantly shaking the blender and pushing everything down through the process. It takes me way longer to blend the ingredients than it should. I topped it with some Galaxy Vanilla Almond and had a big Jonagold on the side. I’m not sure if I actually wanted that apple but I wanted more crunch after I finished the bowl! The one downside about making smoothies for breakfast is that I always want something solid to go along with it, where as oatmeal fulfills  all of my meal texture/flavor requirements. Hopefully I’ll get back to the world’s greatest breakfast tomorrow!

My roommate and I are having a special dinner tonight and I can not wait. Hopefully I’ll be able to sneak a few photos!!

Among my, lets call it ‘5’ , different types of breakfast cereals sits an almost full bag of muesli. I made this purchase a few months ago and have only used it once. I have a month left of school, and decided it was time to start liquidating my supply. Today I made a very random overnight mix using muesli and open can of pumpkin that has been sitting in my fridge.

Layer 1: 1/4 cup Bob’s Red Mill Muesli, 1/4 cup almond milk

Layers 2, 3 and 4: Pumpkin Yogurt (1/4 cup canned pumpkin, 1/2 cup Greek Yogurt, cinnamon, nutmeg, cloves) and 1 medium sliced banana.

Layer 5: Galaxy Vanilla Almond Granola

I realize how disgusting this looks, but I have to reassure you that it was fantastic. I am also going green and recycling my apple sauce jar as a dish again. I think I prefer using Muesli for overnight oats, compared to regular rolled oats. I really like the elements of the sunflower seeds and raisins, and the texture they obtain overnight. It creates a creamy and flavorful bowl rather than something on the chewy side. It made a world of difference to incorporate the Greek yogurt and pumpkin a head of time. When I was mixing it together last night it had a soup-like consistency and this morning it formed into the perfect custard. I layered the Pumpkin Yogurt with sliced banana to give it a bit of sweetness. I like adding textural elements to dishes, especially when the main component is creamy. Galaxy Granola is perfect, it  holds its texture better than any other I have tried, providing a nice crunch in every bite.

After breakfast I strolled to class and took in the beautiful weather. All that separated me from the weekend was a 10 minute presentation, then FREEDOM! After class, I went to the gym and did 20 minutes of light elliptical and 30 minutes of  arm weights (dumbell curls, side crunches, front raises, lateral raises and rows all 3×10). Immediately after, I was anxious to get my number one mission out of the way: operation get a new blender. I packed my old blender up and went to Target to see if I could possibly exchange without a receipt. Normally I would just let it be (I have had it almost a year and didn’t even have the box!), but this blender had a 2-year warranty. I was able to get an upgrade on my blender and it only cost me $8! SCORE! I was happy  to make the exchange but it came with a few sacrifices: LUNCH!

I ended up getting stuck in traffic and I could hear my stomach start to rumble. It was nearly 1:30pm! By the time I got home I knew what I wanted: PB and J. I read somewhere that it was National Peanut Butter and Jelly Day, and I needed some quick protein so it was essential to have this classic lunch. However, I did have to put a spin on it. On to my peanut butter base went Crofter’s North America Superfruit Spread (a tart spread with cranberries and blueberries) and Shredded Carrot. I’m not sure what possessed me to do this but it worked! On the side I had a Gala Apple with cinnamon, an unpictured Adora chocolate calcium disk COVERED in more PB, and a Mini Monster.

Oh…this mini monster…NOT my best effort. I really wanted to use my blender, and since I lifted a bit at the gym thought I needed some extra calories and protein so I came up with this concoction: 1/2 cup almond milk, splash of water, 2 ice cubes, 1/2 frozen banana, 10 frozen cherries, 1 scoop Chocolate Amazing Meal and 2 handfuls of spinach. Too much spinach not enough sweetness!! I should have added some regular cacao powder and less spinach. Live an learn. It wasn’t so awful, I drank it all, but the prominent flavor was spinach.

I’m headed home tomorrow for Easter and CANNOT WAIT to see my family! Not that I dislike being at school, but I find the most comfort when I am home surrounded by loved ones and have lots of good home cookin’! I plan on doing a bit of cooking with my mom too, so hopefully I’ll be able to snag a few photos before we devour some good eats!

I woke up this morning with absolutely NO appetite; very strange for me. I’m never starving when I wake up but almost always want a big bowl of oatmeal or granola to start my day. Today, the very thought of oatmeal, or anything sweet for that matter made me cringe. I had a slight headache and stomach ache, and could only imagine that something sweet would add to my yucky feeling.

Why was I feeling like this? Well, last night after dinner I was full and content but the sweet-tooth fairy told me that it was time for dessert. I wasn’t craving anything but went for an old stand by: Vanilla Ice Cream topped with Chunky Apple Sauce, Peanut Butter and Kopali Dark Chocolate Covered Cacao Nibs. I was watching TV as I ate this and before I knew it, it was gone. I decided I wanted a bit more and fixed myself a second bowl, this time using Dark Chocolate Almond Spread and Galaxy Vanilla Almond instead of Peanut Butter and Cacao Nibs. About half way through the second bowl I was feeling uncomfortably full but refuse to waste, so finished it. I did not leave myself enough time between eating and bed to digest and it resulted in a “yucky” feeling morning.

I had to get to class, and never go breakfast-free, so I made myself a bit of a light and savory breakfast, aka a Green Monster. Into my blender went 1 cup vanilla soy milk (I like using almond milk better, but had to finish this carton off), 1 frozen banana, 1 scoop Chocolate Amazing Meal, 2 huge handfuls of baby spinach. I used the apple sauce jar (ELR style) that I conveniently polished off last night as my “to-go” cup and headed out. I think I was a bit dehydrated (maybe last night too…should have had WATER instead of extra dessert, oy!) and I drank a few glasses when I woke up. Thankfully my headache and stomach ache were gone a few hours later, and my appetite returned.

For lunch I had a normal campus-dining hall large tuna salad complete with artichokes, cauliflower, cucumbers, mushrooms, snap peas, carrots, spinach, balsamic vinaigrette and a few dashes of hot sauce. I love the combination of artichokes, cauliflower and tuna, it has such an Italian feel. If I was able to get a few olives and peppers in there it would have sealed the deal.  I also had a big and crisp Empire Apple on the side. I can’t wait for apple picking season, I have to say I am pretty obsessed with all varieties of this fruit.

Later in the afternoon I reclaimed my sweet tooth with a new favorite combination at Starbucks: Grande Decaf Cappuccino with Sugar Free Hazelnut. Yes, I know the sugar-free flavors aren’t particularly good for you, but they just so delicious every once and a while :). I was actually craving an Awake Tea Soy Latte, but I have kept up during Lent with the “no caffeinated beverages” ordeal. I had a few slip-ups here and there, but I feel AMAZING being caffeine free. I swear I am a whole new person. I love coffee so I still drink decaf but I feel more refreshed and energetic all the time!

Speaking of Lent, IT’S ALMOST OVER, which means Easter is coming up! I’m heading home for a big family get together on Sunday, and hopefully will be cooking up something fantastic to share with my family! I have been thinking of some type of sweet bread, rosemary bread, an asparagus dish, a root vegetable dish, and something lemon/blueberry for dessert. Decisions, decisions.

For dinner I was supposed to go to Sedar with my friend but she wasn’t feeling well, so AGAIN I did not go. She has promised to cook a traditional Kosher meal with me later in the week, so at least I can look forward to that (hopefully!). I wanted to keep dinner light and simple tonight, and decided to make use of the second half of my celeriac and leek. It is still a bit cold out (but won’t be for long!!!) so I decided to make a Leek and Celery Soup topped with Balsamic Roasted Mushrooms and Lemon-Thyme Cream. Well…this was a bit more of an “experience” than I had hoped for. When I went to remove the blender from it’s base, my soup came out of the bottom! All of my pretty visions  died. All I wanted for dinner was a nice soup and here it was all over my counter, and BURNING my hand. I managed to save 3/4 of it, garnish it how I wanted and try it’s deliciousness, but it was a sad, sad cooking experience. Maybe my blender just wasn’t meant to be used twice in one day? No more green monsters for a while :(. On the side I had some a simple salad with spinach, red peppers, olive oil-herb roasted carrots, cucumber, sprouts, goat cheese and apple-cranberry chutney.

I can’t decided if dessert is in my future this evening but I have learned a very important lesson: listen to your body not your habits. I get so in the habit of having dessert every night that I often don’t realize if I’m actually in the mood for it. Usually if I am full, I can have a piece of chocolate and be done. Last night was a combination of wrong choices:  not hydrating properly and the decision to mindlessly eat dessert even though I was not craving it. I felt so off today, and it goes to show that the foods you eat really do influence the way you feel. Oh well, live and learn. Hopefully tomorrow my breakfast concoctions will be back on track :).

I started today a little bit off routine. I’m a creature of habit, so when I wake up late I feel rushed and unbalanced. It was almost 9am and I still needed to pack, shower, get ready, and more importantly HAVE BREAKFAST! I wasn’t very hungry this morning or in the mood for anything particular but I really do not like starting my day with out breakfast (if you read my blog you will see that it is my favorite meal of the day). I wanted a loaded green smoothie (1 cup almond milk, 1 frozen banana, handful of spinach, ice, chia seeds, and Amazing Grass Chocolate Superfood) topped with  Galaxy granola but being the good room-mate that I am, realized my room-mate was still sleeping and my noisy blender going off would be a rude awakening. I decided for the next best (and easiest) thing: 3/4 cup Chobani Plain Greek Yogurt, 1/4 Cup Vanilla Soy Milk, 1/2 TBS Chia Seeds, 1/4 Cup Galaxy Vanilla Almond Granola (my new OBSESSION!!! LOVE THIS STUFF!), a handful of blueberries and cinnamon.

When I stepped out the door the rain was gone, the clouds had parted and there was nothing but blue skies and sunshine! This changed my mood immediately, and after class I had to go for a leisurely riverside run. It was a little bit cold with mild wind in the 50’s, but there is one thing I do not do when we have a sunny day: waste them. I have to take full advantage of the weather, and it always lifts my mood. I ran for about 40 minutes (plus time for pictures, because it was TOO beautiful).

While I was running I started to think about getting a juicer. (My foodie mind is in perpetual motion)Since it is getting to be farmers market season (BEST TIME OF THE YEAR!!!! IT’S PRODUCE CHRISTMAS EVERY WEEKEND!!!) and the weather is getting nicer, I think that a juicer might be a great addition to my kitchen. I love fresh juice, but it is SO expensive at almost $6 a bottle and how refreshing would it be to wake up in the summer and have a glass of fresh juice with breakfast or in the afternoon? I have looked at a few online, and was wondering if anyone had suggestions? I was thinking about getting a product from Breville, I have read about them and when I inquired about juicer advice, the company quickly responded and made suggestions based on the level of use I was looking for.

Since breakfast was a little lame, I had to make up for it with a good lunch. Warm Lentil Salad with Beets and Hazelnut Coated Goat Cheese and of course an apple. When I make warm lentil salad, I usually serve it with a walnut coated goat cheese. I actually had this in mind last night but then was having a Dijon craving and didn’t want my plate/flavors to be TOO busy. I love the way the goat cheese medallion slightly melts when it is placed on the lentils. The combination of the spices and the texture of the lentils with the creamy goat cheese is phenomenal. It is simple, but so luxurious.

Dinner tonight will have to be something fast; I’m doing my usual shift at the bakery until 9pm. I love it there :)! I might be feeling creative with my “lunch box” dinner so I’ll be sure to post later!

I received some comments about what I do for work outs/ what snacks etc I eat through out the day. I don’t always post everything, so I was wondering what you would like me to blog about more. I would love to hear some feedback! 🙂
