My internet is up and I’m officially back to blogging :)!

I’m a planner and an organizer. After a few days at my internship, I have come to the conclusion that the 8am-5pm life was meant for me. Gone are the days of staying up until 3am for no reason, wearing the same sweatpants everyday, showering twice a week and living off of a Starbucks heavy diet. That’s right college is over….good riddance.

I’m not necessarily saying that I need a strict schedule but it is nice to have a semi-consistent set of obligations and goals. I like waking up early, working all day and relaxing in the evenings. Looking back at my college years, I’m not sure how I functioned. Sometimes I would finish my day at noon, or start my day at 2pm. I was constantly doing work into the early morning hours and was always awake by 9am because I am incapable of sleeping in. (Did I ever sleep???) Over the past few days I’ve been waking up at 6am, leaving by 7:30am, working until 5pm, going to the gym, arriving home by 7pm and in bed by 10:30pm. An hour and a half is exactly what I need to get ready and have breakfast before heading into work, however; it also requires a bit of planning.

Last night before I went to bed I prepared breakfast and lunch, cleaned my apartment (I hate coming home after a long day and having to do dishes etc) and got my bag ready for work. Doing these little things the night before saves time and frustration, allowing me to enjoy the peacefulness of the morning.

This morning I had a breakfast cookie inspired by Gina and topped it with plain low-fat yogurt (I love Greek yogurt but I was out and this is the next best thing. Low-fat yogurts are creamy and filling. I tend to pick them over nonfat varieties.), strawberries and cinnamon. The night before I combined 1/3 cup rolled oats, 1 TBS crunchy almond butter, 1/2 scoop chocolate whey protein powder, 2 TBS vanilla soy milk, 1/2 of a banana (mashed) and cinnamon and placed it on a plate in the fridge over night. This was so easy and completely held me over through the morning. I will be repeating this in the future!

Shortly after breakfast I was craving juice. I didn’t have any in my fridge but remembered that I purchased a Red Rhapsody Odwalla a few weeks ago. I’M IN LOVE! This was so refreshing and a nice combination of flavors. It is the perfect drink to blend with yogurt and ice for a smoothie on a hot summer day.

It has been an EXTREMELY hot week, and I have been craving cool and crisp vegetables. For lunch I made a semi-Greek salad with 1/2 of a romaine heart, 1 large shredded carrot, 1/4 cup of garbanzo beans, 1-2 inches of cucumber, 1/4 of a red bell pepper, a handful of grape tomatoes, kalamata olives, feta cheese and cracked black pepper. Along side I packed a homemade dressing of olive oil, balsamic vinegar and dried parsley flakes and had a serving of Dr. Krackers and a Jonagold apple.

I wanted something chocolate for my mid-day snack and reached into the bottom of my bag to retrieve the other half of my petrified Chocolate Almond Fudge Clif Bar.

The cable company gave me a time frame between 4pm-7pm for their arrival, so I came home immediately after work. They arrived when I was turning onto my road (!!!) and I was relieved that I would not have to sit in my sweltering apartment and wait. I debated going to the gym or going for a run, but it was FAR too hot outside today. I’m planning on catching up on some busy work, making dinner and heading to bed early tonight because tomorrow is jam packed with meetings and events. I am loving my internship and feel so lucky that I have FINALLY found something that I can dedicate myself to and enjoy!

Dinner last night was simple and satisfying. For some reason warm weather always makes me crave grilled items and fresh produce. I marinated a chicken breast in barbecue sauce and grilled it on my cast iron skillet. I wish I had access to a real grill but my make shift grill pan over an open flame is the next best thing! My chicken was perfectly moist and delicious. On the side I had a rather big salad of mixed greens, alfalfa sprouts, button mushrooms, garbanzo beans, red bell pepper, grape tomatoes and feta cheese. I dressed this salad in a homemade mixture of olive oil, balsamic vinegar, Dijon mustard and cracked black pepper. This dressing was so good that it caused an epiphany: If you have the time, MAKE YOUR OWN SALAD DRESSING! My dressing was the simple and the perfect consistency, really highlighting the crisp vegetables.

Once again, I had strawberries on my mind for dessert. I found a Jell-O pudding in the back of my fridge that I’m pretty sure was expired (gross, I know) but it looked okay so I decided to eat it anyways. I topped it with strawberries and whipped cream. NOTE TO SELF: BUY ICE CREAM ASAP!

I woke up this morning with an odd craving for cold cereal. I assembled a bowl of 1/2 cup Go Lean Crunch, 1/2 Cup Heart to Heart, 1 sliced banana, sliced strawberries, 1 TBS ground flax, cinnamon and 1 cup vanilla soy milk.
It was my first day at my internship so I was rather excited this morning. I debated bringing lunch because of my financial situation, however; because it was my first day I wanted to scope out the scene and try the cafeteria. I had a turkey, lettuce, red pepper and mayo sandwich on a whole wheat pita, a side salad with raspberry vinaigrette and an apple. It was pretty good and only set me back about $4 but I’ll probably pack a lunch from now on. It was another intern’s last day with the company and the department had a send-off for him after lunch. I was really excited because it was complete with CAKE! I had a small piece of dense yellow cake with white frosting (I made sure to get an edge piece for the extra frosting 🙂 )

After work I went to the gym. I knew that I wouldn’t be getting home for dinner until about 7pm, so I planned a head and packed a pre-gym snack and an easy dinner. I had a Tropical Fruit Tart Larabar around 4pm. It was such a nice treat for a hot summer afternoon and fueled my workout. I did about 40 minutes on the precor machine followed by crunches and arm weights. I always thought that I preferred morning workouts, but I really liked how it broke up my day. It was relaxing, and having dinner already prepared was KEY!

When I got home dinner was waiting for me. Last night I realized that I had a portabello mushroom cap to use so I created a stuffed portabello mushroom with couscous, spinach and feta cheese topped with grape tomatoes and more feta as the main component of my meal (I’m planning on some simple sides to accompany this dish but took this picture last night.). To prepare, I cleaned the exterior of the mushroom with a dry cloth (aka paper towel), discarded the stem and gills of the mushroom and brushed the outside with a mixture of olive oil, balsamic vinegar, dried basil and cracked black pepper. I then placed the mushroom cap side down on my cast iron grill pan, added the remaining vinaigrette mixture evenly into the belly, grilled it until tender and let it rest on a plate before adding the filling.

For the couscous, I placed 1/4 cup dry whole-wheat couscous in a bowl, added 1/2 cup of boiling water and let it sit about 5 minutes before fluffing and allowing it to cool. I added a handful of freshly chopped baby spinach, about 2 heaping TBS feta cheese and cracked black pepper into the couscous and mixed to combine. I placed this mixture in the mushroom cap and finished it with grape tomatoes and more feta cheese.

My internship is absolutely amazing! I feel so lucky to have found a position in the food industry incorporating aspects of social media and marketing. I am extremely passionate about food, family, healthy living and social media (obviously!) and can’t believe that I was able to find an involved internship composed of all these elements and more. I don’t want to go into details but today I was able to learn about and work on projects that dealt with iPhone apps, Twitter and blogging. Seriously, someone pinch me!

Lack of internet + no time= my demise. Although I have been completely disconnected for the past few days, I did not forget about my dear blog. My internet is not going to be installed until Wednesday, so I am EXTREMELY grateful right now for free Wi-Fi at coffee shops….I’m also extremely grateful for my parents. They have been my “knights in shining armor” through the insanity of the past week. I can’t believe how much has happened in such a short period of time. To recap:

  1. I graduated college on Sunday May 16.
  2. Immediately after my diploma ceremony I went on a packing rampage and shoved the contents of my college apartment into trash bags and boxes as quickly as possible.
  3. My parents helped me move all of my crazily packed belongings into my apartment and I headed home for a few days.
  4. Early Tuesday morning I left home to get started on apartment unpacking.
  5. Wednesday-Thursday my parents returned to help me clean/unpack/organize my apartment. All day Wednesday was spent cleaning. I had work at the bakery on Thursday and my parents stayed to complete the apartment transformation without me! I came back after work to a beautiful, organized and clean home. I’m not sure what I would have done without them because they completely transformed my hole-in-the-wall into a cozy abode.

When I got back from the bakery Thursday night my body was screaming “GIVE ME VEGGIES! GIVE ME VEGGIES!” The past few days haven’t exactly been produce heavy, and I was dying for some clean eats! It was nearly 8:30pm when I got back to my apartment, so I complied a salad in my new PERFECT SALAD BOWL (This bowl is is deep and has high sides so the contents of my typically gigantic salads mix well and do not fly all over. I’ve always used plates for my salad constructions and they can be messy. I’m very excited about this purchase. Thanks Mom and Dad!) with about 2 cups of mixed greens, 1/2 head of romaine, 1/4 cup garbanzo beans, handful of alfalfa sprouts, 1 stalk of celery, 1/3 of a large cucumber, 3 big and beautiful strawberries, 1/2 of a navel orange, 1/3 block of 5 grain tempeh and feta cheese topped with balsamic. This beautiful large salad was enjoyed on the floor of my new living room while watching Julie and Julia on my tiny TV. After dinner I enjoyed an ice cream sandwich for something sweet and cool.

Previous Eats:

On Monday I ate the contents of my parents fridge which includes but is not limited to the following:

Later that night I shared crackers, cheese and a martini with my dad before dinner. My mom prepared a fantastic grilled chicken breast, blue cheese wedge salad with a tarragon vinaigrette and herbed basmati rice. We enjoyed this meal with a cool and crisp Simi Chardonnay.

With a little help from my friends Betty Crocker and butter, I assembled Oatmeal Chocolate Chip Cookies (extra chocolate chips added) for dessert. I had four of these while watching TV with my parents. It was the perfect way to relax before returning to my cluttered apartment.

Running out the door on Tuesday morning I grabbed a Chocolate Chip Cookie Dough Luna Protein Bar (as if I didn’t get my cookie fix the night before) and headed back. When I got to my apartment I snacked on almonds and dried apricots before assembling my first apartment meal. For lunch I made a simple salad with a slice of leftover pizza. I had an apple and dark chocolate shortly after.

Dinner was a complete disgrace so pictures were not taken. I had a meeting from 5-9 so I decided to fill up with granola, cereal, museli, a frozen banana, vanilla soy milk, and Greek Yogurt. A few bowls later and I was  extraordinarily stuffed. When I got to the meeting the smell of pizza filled the air. The temptation was too much and I had a slice of cheese and a slice of pepperoni. After the meeting I had a dark chocolate almond and a dark chocolate cashew cluster before calling it a night.

Wednesday morning I had an 8am class to learn how to use my new MacBook. I wanted oatmeal for breakfast, but it was out of the question. The gas for my oven was not turned on and my microwave aka the number one cooking device used during my freshman-junior years of college remained in storage at my house. I made a portable breakfast for the drive:

This monster was composed of 1 large frozen banana, 2 large handfuls of spinach, 1/2 scoop chocolate whey protein, 1 scoop GREEN Superfood, cinnamon, 1 cup vanilla soy milk, 1 TBS crunchy PB and 5 ice cubes.

After the appointment I went to Starbucks for a Grande Soy Misto and a KIND Cashew and Almond Bar.

I had a late lunch and my parents finally arrived, ready to get down to apartment furnishing business. I have the world’s greatest parents, I can’t believe how much they have helped me with over the past two days. I’m pretty sure that if I did not have their assistance I would have just lived in a dirty, half-unpacked apartment for the next three months. It was a long day of cleaning that ended in Dinosaur BBQ for dinner. I started with a Middle Ages IPA beer and for my meal I had a chicken platter with BBQ chicken breast and wing, baked beans (so tasty and cooked with pulled pork!), corn bread, and a marinated cucumber and tomato salad. You better believe I demolished the entire plate!

This overdue entry is a bit lengthy, so I’m going to stop here. I have been reflecting over the past few days and have some thoughts for my blog that I want to share. I’m also exceptionally excited about my internship that starts MONDAY! I’ll be back later today (if I have the opportunity to obtain internet!) so stay tuned for more trials and tribulations.

Growing Up,

Nora

Despite the fact that I have had such crazy sleep this week, I still managed to wake up this morning at 7am! I went to bed around 11:30pm last night, so I got my required hours worth, but you can imagine my shock when my body naturally woke up at such an early hour. I have never been the typical college student who sleeps until noon anyways and find that no matter what time I go to bed I am always up before 9am. I’m such a morning person though, so no complaints! I love the peace and quiet before a crazy day.

Going back to sleep was not an option at this point so I decided to get a jump on my day. It STILL hasn’t hit me, am I really done? My laundry basket has clothes beyond the brim and I have piles of papers and books to sort through, so I immediately made a to-do list for my day. The weather was going to be in the 50’s and raining so I figured that it was a perfect day to attempt my cleaning/reading lists.

Before yet another home-bound day I went to a Vinyasa Yoga Class. I haven’t been to a class in weeks, and my body felt so sore when I woke up from sitting hunched over my computer multiple days in a row. The class started at 10, so I decided to have a refreshing Lemon Zest Luna Bar and Jonagold Apple while catching up on emails.

This bar had me feeling rejuvenated. I love the fresh lemon flavor in the morning because I can’t always stomach chocolate first thing.
The class was amazing but made me realize how stiff I have become. Hopefully I can get back into yoga this summer. On the topic of summer…. I HAVE A JOB! The HR representative called me when I was on my way to yoga, and I sat down to fill out paperwork after class. Don’t worry I thoroughly apologized being a com for being a complete sweaty mess. I applied for this position in late December and have had two interviews, so the anticipation was killing me. I shed a few tears when I found out I finally was granted the position. I don’t want to go into details quite yet, but essentially it is a paid summer marketing position in the food industry!

When I got back from yoga/paper signing I made exactly what I was craving: A Green Monster with Granola Bowl.

Into my blender went: 5 ice cubes, 1 large frozen banana, 1 scoop chocolate whey protein, 1 scoop Amazing Grass Green Superfood, 3/4 cup vanilla soy milk, 1/4 cup water, cinnamon and spinach.

I topped it with a bit of Nature’s Path Vanilla Almond and Flax Granola. Adding the extra ice cubes today made it more like an ice cream, it was so thick! I forgot to add peanut butter to the mix today, and found that I really prefer the flavor and feel more full when I add it.

Shortly after I made myself a snack plate of strawberries, MaraNatha Dark Chocolate Almond Spread and 2 carrots while browsing for apartments! I’M LOOKING FOR APARTMENTS!?! I never thought the day would come when I would be searching for a place of my own. The only difficult part is that I’m not sure how long I will be here for, and I have to move in one week. YIKES!

I had another Jonagold later on…I have a thing for apples :).

I’m off to finish up some laundry and then dinner with my roommate who I haven’t seen for an entire week! I can not believe this fact, but we have had such crazy and opposite schedules. It will be good to finally catch up and relax.

Really,

Nora

Today is going to be the LONGEST day of my life. I have been up since 6:45am and have my hardest final at 4pm. I have been studying for the past few hours, so thought a quick post was in order before making my way to the library. Yes, that’s right, no coffee shop for me today! I want to stay on campus studying until 3:50pm then casually make my way over to the exam room.

Today I woke up and needed an energy boost. I decided on a Loaded Green Monster for breakfast.I almost couldn’t fit the whole thing in my big wine glass! It was so refreshing and thick because I added some extra ice and frozen blueberries to the mix today. I’m doing extremely well with the whole “clean out my refrigerator/freezer” initiative. I just keep throwing random bits and pieces here and there, so I think I should be successful by the end of next week when I officially move out. Scary to think that one week from Sunday I will be out of here!

In my monster: 5 ice cubes, 1 large frozen banana, 1/4 cup frozen blueberries, 1 scoop chocolate whey protein powder, 1 scoop Green Amazing Grass Superfood, cinnamon, 1 TBS crunchy natural peanut butter, 2/3 cup vanilla almond milk, 1/3 cup water and 2 big handfuls of spinach.

It was so thick that I ended up eating it with a spoon. I should have added granola to it because shortly after I wanted something crunchy and had a Kashi Pumpkin Pie Bar with a cup of coffee.  I love pumpkin, and went through a serious pumpkin phase this fall where everything I ate had this flavor. I had pumpkin coffee, muffins, bread, yogurt, pie, ice cream, granola bars, custard…the list goes on, it was intense. I had two of these just sitting in my overflowing pantry and thought it would be a nice treat before starting some major studying.Lunch today will be out of my lunch box. First up, Ezekiel Cinnamon Raisin Sandwich with goat cheese, cinnamon (seriously, I put cinnamon on EVERYTHING!), Crofter’s North America Superfruit Spread, spinach, cucumber and turkey. As I said before, I’m doing extremely well with the whole fridge cleaning thing!Next up a variety of sides: Apple, Chobani with cinnamon and blackberries, almonds, 1 large carrot and 2 stalks of celery.I can already tell you that my apple will be devoured before lunch time. I get nervous when I am “crunch time” studying and apples are the perfect way to keep me focused. I ate a few extra almonds out of my jar while packing…what can I say, I need brain food :)!

I already have a little something-something planned for dinner after my exam. I planned it knowing that it would be a long and tedious day and wanted to come back to something exciting before I start studying for my second exam, which is tomorrow at 12:30pm. Looks like it’s going to be a long day and night :/ . Such is the life of a college student. 3. More. Days.

Nora

WHOA, busy day. It is 6pm, and this is the first time today that I have been able to sit and relax! I had a day full of appointments, errands and, the most significant happening, MY LAST COLLEGE CLASS EVER!!!!!!! WOOOOOOHH! Now all I have to do is pass 2 finals, finish 1 paper and get through Senior Week.

Today started at 7:45 am when I woke up to head to the gym. I typically don’t go to the gym in the morning, but since today was rather busy I wanted to wake up early to energize myself. Before going to the gym I tried the Chocolate Peanut Butter Luna Protein Bar. Hello lover 🙂 (okay…I’m obsessed with Sex in the City, and my “hello lover” phrase is stolen from the one and only Carrie Bradshaw.). This was my favorite of the three flavors by far! It isn’t overly sweet and has an awesome peanut butter and chocolate flavor. It has 12g of protein and 190 calories, which was perfect pre-gym fuel.

On Wednesdays I have been trying to incorporate some upper body weight training, so I usually start with a light cardio and then lift moderate weights. Since I was crunching time I cut my work out a bit short, but here it is:

20 minute run–2.2 miles

4 minute walk @ 4.0

3 x 10 bicep curls with a bar @ 40 lbs

3x 10 lateral raises @ 7.5 lbs

3×10 hammer curls @  20 lbs

3 x 10 side crunches @ 22.5 lbs
Consuming whey protein within an hour post work out is supposed to be great for rebuilding muscle so I decided to have breakfast number two: Green Monster, Granola and Raw Almonds. This contained: 1 scoop chocolate whey protein, 1 scoop Green Amazing Grass Superfood, a generous amount of cinnamon, 1 large frozen banana, 2/3 cup vanilla soy milk, 1/3 cup water, 2 handfuls of spinach and 2 ice cubes. I topped it off with 1/4 cup Nature’s Path Vanilla Almond Flax Granola and raw blanched almonds. When I was consuming this lovely bowl I had two revelations:

1) CINNAMON IS THE BEST SPICE EVER! I would and do put it on everything. It is so key for flavor the warm flavor of this bowl, I love it!

2) Raw blanched almonds really add a lot flavor/texture wise. They are buttery, smooth, and full of flavor. Roasted almonds have a bit more crunch but these little gems are phenomenal!

Workin’ it Out,

Nora

I finally got my hands on Luna Protein Bars! I have seen them in blogs for quite some time now but have not been able to locate them until this weekend. As I was browsing through my favorite store on the planet, Target, I spotted these babies and HAD to pick them up. I was excited to try them because the flavors sound awesome, and it is hard to come by an organic protein bar. A few years ago when I was preparing for long runs I would eat Cookie Dough Balance Bars before heading out the door. They are low fiber, high protein and had enough calories, fat and carbs to energize me without generating an upset stomach. I’ve tried cooke dough and peanut butter flavors, but have never seen a chocolate cherry almond protein bar before. I knew this had to be the first flavor that I tried.

This morning I was out the door by 7:30am to pick up tickets for my school’s Senior Week Wine Tour. Senior week is the time between the end of finals and graduation and is used to honor and celebrate seniors before we are launched off into the real world. The wine tour is something I have been looking forward to because I LOVE the Finger Lakes Region wines, and can not wait to share them with a few of my friends. Granted half of them don’t really appreciate good wines, but it will still be a great experience. Ticket sales didn’t start until 9:30am but they go quickly, so it was essential that we got there early. I didn’t have time for a sit down breakfast so I decided to pack a Chocolate Cherry Protein Bar and an apple and grab a Soy Misto at Starbucks while we waited. I wanted to go to the gym after so I thought this would be good fuel.

Flavor wise, this was just okay. It was a little bit too sweet first thing in the morning and I couldn’t really taste anything that resembled almond. I’m not sure that I love the flavoring of cherry but it was a filling and energizing bar. The texture was nice for a protein bar. It was dense like most protein bars I’ve tried, however; the crispy bits in the filling made it more palatable and pleasing.

I can’t wait to try the other flavors, and although the cherry almond was not what I was expecting, I think that the Clif Bar company did a great job creating a protein bar.

Happy Monday,
Nora
