I hope everyone had a relaxing day of rest! I spent a little too much time in my apartment snacking/movie watching/doing busy work on my computer and HAD to get out! I decided to take a “walk and talk” and called my mom for a little catching up and a heart to heart. When I returned I prepared a quick and easy fish dinner.
I know I have said this several times but I LOVE working at my grocery store. Not only because the bread department is amazing, but also because the store environment is so positive. All of the workers genuinely care and respect each other and go above and beyond to demonstrate extraordinary customer service. Even on my days off I love walking in because it feels like coming home to a big, welcoming family. I am greeted with a smile and conversation by employees in every department, regardless if we actually know each other. Today I was talking to one of my friends in the seafood department and he recommended the Alaskan Halibut. I decided to splurge and bought a piece.
I had to have an early dinner tonight and since I had a late lunch/was snacking all day wanted to keep it light. I baked the halibut with a little olive oil, thyme and parsley at 375 for about 15-20 minutes. I finished the fish with a “tapanade” aka roughly chopped kalamata olives and fresh Roma tomato. On the side I had a Roasted Beet and Arugula Salad with a POM vinaigrette. I roasted 1 medium beet and 1 golden beet at 400 for 40 minutes. Once cooled, I cut them into small cubes and dressed it with a vinaigrette that was a mix of honey, POM juice, olive oil, orange juice and a dash of balsamic vinegar. It was light and refreshing.
For dessert the freezer was calling my name. Ice cream is by far my favorite dessert. In fact after a long internal debate (yes I am so cool that I debate with myself) I determined that it was my favorite food. This is a big deal because I literally have not been able to find a food that I dislike. Sure, there are some things that I prefer over others but there is nothing that I wont eat. I already had two open ice cream containers in my fridge but felt compelled to buy Perry’s Peanut Butter Chip Frozen Yogurt when I saw it in the store. I had a generous bowl of this, and it completely HIT THE SPOT. I loved the big ripples of frozen peanut butter running through the yogurt and the hearty chocolate chip squares. I am actually shocked that this is a frozen yogurt. It was so creamy and luscious that I would not have been able that it was a yogurt by taste alone….plus it has the added bonus of probiotics! What could be bad?
