Happy Friday! My morning oats are finally back! And thank goodness! While I typically do enjoy mid morning snacks, yesterday I was absolutely FAMISHED a few hours after breakfast (way hungrier than usual, and after calculating my actual “breakfast to famished” time it was 2 hours not 3). I determined the only breakfast that truly satisfies me in the morning is a big bowl of oats. I like to start my day off with more protein than a bowl of cereal and milk can provided. Does this mean I’ll never have a bowl of cereal again? Absolutely not, I find cereal and milk refreshing, especially when I need to switch up my breakfast routine a bit. I think next time I’m going to “pump up” my cereal with some nuts or nutbutter. Plus, everything is better with nuts!! Live and learn. Today, in an attempt to use my last Red d’Anjou pear, I created a bowl of warm Pear Crumble Oats:
In the mix: 1/3 cup oats, 1/3 cup almond milk, 1/3 cup water, cinnamon (add these ingredients and allow to soak for 5min-overnight heat on high for 1:30 until a consistency you like), 1 Red d’Anjou pear, ~2TBS fruit and nut granola, ~1-2 TBS Crofter’s North America, Almond Butter “Frosting” (1 TBS Almond Butter, 1 TBS Chobani Plain Greek Yogurt, 1 TBS Vanilla Soy Milk –combine and heat for 40 seconds in the microwave). I have to give a shout out to KERF and Healthy Exposures for the idea of creating a “frosting” to top my oats with!!

This was delicious! I’m starting to think I am a “fall foods” girl; I will never tire of cinnamon, apples, pears, squash, pumpkin, cranberry or turkey! I am leaving for class this morning MUCH more satisfied than yesterday. Food really does affect your mood and the way you feel, so treat yourself right!
