I am a bad food blogger, posting for the first time today at nearly 11:30 pm! I started my day off with cold cereal, banana, berries, soy milk and an apple…boring aka no post. Lunch was a surprisingly good hummus and grilled veggie panini on whole wheat with a side garden salad with balsamic (yes, this was at a CAMPUS eatery…huge shock and lack of picture). This afternoon I snacked on my FAVORITE KIND Fruit and Nut Bar and a kiwi before headed to the bakery. As you can see my day was packed, thus the late post. I know I have mentioned it in my blog a few times, but KIND Fruit and Nut bars are like little heavenly treats. I am a fruit and nut fanatic to begin with but I especially love these portable packages of whole pieces of nuts, fuzed together with dried fruit. I also like their walnut and date bars; it feels like I’m eating a healthy candy bar or something…always puts me in a good mood and leaves me energized.
Dinner was some leftovers, including a “slaw” and cumin roasted chickpeas that I made last night. I am going away for spring break in a few days and absolutely HATE wasting food. I had a bunch of veggies in the fridge and decided to make a gigantic bowl of slaw using: fennel, broccoli, carrots, cucumber, red bell peppers, cracked black pepper, plain Chobani and white wine vinegar. It was the perfect way to use up those veggies! I can throw it on top of anything, eat it as a side dish or stuff it in a sandwich! Last night I made: Orange Chicken Salad with a Creamy Slaw and Roasted Chickpeas with as side of Roasted Asparagus and Mushroom ChipsIt was delicious and definitely satisfied my veggie/crunchy food in take for the day! I really like pairing elements of sweet and heat. The oranges were a nice contrast to the cumin chickpeas, and the crunchy cool slaw balanced it all out. I ended up roasting the asparagus and mushrooms so that they had a slight char and crunch. It was a nice side for the cold and raw main dish.
