With some inspiration from the “flavor of the month”, superfood, on foodbuzz.com I created this delectable dish: Pan-Seared Salmon with Spinach and Israeli Couscous, Berry and Walnut Pilaf. I have done some research on superfoods (see my “food facts” tab), and thought this meal pulled a few of my favorites together into a well balanced dish that contains protein, carbohydrates, fruits and vegetables! How healthy! My proteins, salmon and walnuts, are both packed with heart healthy omega-3 fatty acids. The blueberries I incorporated into my grains are filled with antioxidents, and my vegetable, spinach is an excellent source of iron and calcium. I love knowing that I am treating my body right! To finish I had FROZEN YOGURT (that’s right found a good one: Turkey Hill Mint Chocolate Cookie), which contains probiotics, with frozen strawberries and LIGHT whipped cream. I think I’ll continue this R&R night snuggled up with a movie.
