Yesterday I made a very typical grocery-store-tour shopping trip. You know, the kind where you “only need a few things”, and end up wandering around the store aimlessly for hours and find a bit more in your cart than you intended? Well, among other fun things, I purchased Edamame Hummus. I have been on a bit of a hummus kick recently (I go through more containers than I care to admit per week) and couldn’t pass this one up. I was very excited this morning as I packed my lunch to create The Veggie Monster. I spread the hummus on two slices of Ezekiel 4:9 sprouted whole grain bread and packed it full of veggies. Talk about healthy energy, this sandwich will definately get me through afternoon doldrums! The edamame makes this a bit creamier than traditional hummus and lends a magnificent green hue. It is made with tahini, garlic, lemon, chickpeas and edamame. The flavor of the edamame was very distinct and not overwhelmed by the tahini and garlic flare. It was a luxurious base for all those veggies!
